CreMoc* Puff

CreMoc* Tiger Soes (Cream Mocca)

Ingredients for Puffs:

  • 130g Butter
  • 1 1/2 Water
  • 1 tbsp Sugar
  • 1/4 tsp salt
  • 180g plain flour
  • 5 egg (M)
  • 1 sdt Vanilla Essence
  • piping bags & nozzles

Topping Tiger

  • 100 gr Butter
  • 60 gr Cooking Oil
  • 2 egg
  • 90 gr sugar
  • Mix everything till well blend add in:
  • 40 gr milk powder
  • 280 gr plain flour

Filling:

  • 300ml dairy whipping cream
  • 2 sdm mocca paste
  • choco powder (if u like)
    Method
    - whipping cream + mocca paste+ Choco powder whip it.

METHOD:

  • Pre-heat oven at 200c. Grease baking tray or place a sheet of non-stick baking sheet on it.
    Melt butter, water, caster sugar & salt in a pot under medium heat until butter is dissolved, then turn off the fire.
  • Turn on the fire again at low heat. Fold in sifted flour, cook until the mixture to form a soft dough, remove from heat.
  • Transfer hot dough into a mixing bowl, pour in vanilla essence & beat for a few minutes to reduce the temperature of the hot dough.
  • Mix in eggs one at a time, beat thoroughly for each addition. Beat the mixture become a smooth batter. (When mixing in the eggs, make sure the temperature of the hot dough will not cook the eggs)
  • Transfer smooth batter into a piping bag & pipe out the batter onto the baking tray. Using spoon take 1 scoop of Tiger Topping.cover the top of puff.
  • Bake in the pre-heated oven for 20 minutes, reduce heat to 170c & bake for another 10 minutes.
  • Let the baked puffs to cool on the cooling rack.
  • Pipe the Cream filling into puff

Choux Pastry

1-22 November 2009 one of Indonesian Forum (NCC) have Choux Pastry(Soes) competition.. Check it out here!! I made this for fun. i dont even dare to submit my work as they are really really pro and good! i still need to do alot of home work!


I used Cream Puff recipe.. u can design as desired!

and for the Ganache:

  • 200ml whipping cream
  • 250 gr Dark COoking Chocolate

Microwave it for 5 seconds, take it out stir and add another 5 seconds repeat it till its smooth.

Amris

2nd time i made this snack! its well welcome by family.. they said its yummy.. as its not sweet but cheesy! i made 60 pcs..fill with bacon and ham and cheese and egg..!

if u are in Singapore i dont mind to give u a tester (T&C apply).. hahaha im sure u will like it too!

PS: its take time to u to practice to make a smooth skin..

Cream Puff

ci huyyyy.. today im going to Shi fu house.. and im thinking to make a puff.. i can bring for all cousin and aunt to try.. :) yeah.. they are my guinea pig.. :D Shi Fu is vegetarian.. so she cannot try..as its made from egg.. ! and i bring some cookies too.. they said. its good.. and they finish all the puff.. *happy*


Ingredients for Puffs:
  • 130g Butter
  • 1 1/2 cup Water
  • 1 tablespoon Caster Sugar
  • 1/4 teaspoon Fine Salt
  • 180g Plain Flour (sifted)
  • 5 Eggs Grade A
  • 1 teaspoon Vanilla Essence
  • piping bags & nozzles
Ingredient for Butter Vla:
  • 2 egg yolks
  • 50 gr cornstarch
  • 500 ml fresh milk
  • 75 gr sugar
  • 1 sdm rhum (optional)

How to make:

  1. Melt the cornstarch with some milk, shake off the yolk, mix together. Set aside.
  2. Boil milk and sugar, stirr until sugar dissolves. Pour the cornstarch mix, mix well and fast to prevent burnt, let boil once again. set a site and let it cool.
Method:

  6. Transfer smooth batter into a piping bag & pipe out the batter onto the baking tray. Bake in the pre-heated oven for 20 minutes, reduce heat to 170c & bake for another 10 minutes.
  7. Let the baked puffs to cool on the cooling rack. Use a pair scissor to slit a big opening for all the puffs & pipe in the Vla filling.

Egg Prata and Curry Chicken

This weekend mum cook curry chicken.. so make egg prata.. its a good match!!


Ingredients:
300 g Plain Flour
170 ml Water
1 tbsp Beaten Egg
¾ tsp Sugar
¾ tsp Salt
Margarine

Egg Mixture:
~ 2 Egg
~ 1 stalk spring onion
~ salt and pepper to taste

Method:
1) Mix the egg, sugar, salt and water for 1 min at low speed. Add in PrimaFlour Plain Flour, increase to medium speed and mix for 4 mins till a stiff dough is formed.
2) Divide the dough into portions of 100g each.
3) Round off and coat with a little ghee.
4) Cover the dough and leave for at least 8 hours or overnight for better results. (The dough colour should be off-white)
5) Grease the table with ghee. Flatten the dough and pat. Stretch it in a circular motion with your hands to make a found thin film. (See illustration)
6) Fold the sides of the dough to the center.
7) Melt a little Margarine and fry till golden brown.

If you wish to add egg: just pout the egg mixture over the plain prata..

Sweet Potato Donut

Here i make Donut.. not really nice shape.. :)


Ingredient:
320 grams flour (a bit more if the dough is too sticky)
2 tsp yeast
1/2 tsp salt
150 grms mashed sweet potatoes
2 tbsp sugar
30 grms butter
100 ml water

For coating
Some sugar or icing sugar

1. In a large mixing bowl mix all the ingredients together and knead for about 6-7 minutes until you get nice smooth dough. Add some extra flour if it’s so sticky. Cover the bowl with a dry kitchen towel and let double it size at a warm place.
2. Punch down the dough and remove onto a floured work tabletop. Roll out the dough to about 1cm thick and cut the dough out into rounds with a donuts cutter. Gather the snaps and re-roll, then cut out more donuts.
3. Place donuts on parchment paper,cover and let rise for 20 minutes
4. Heat oil for deep-frying in a frying pan over medium heat.
5. When the donuts are golden brown, turn them over and cook the other side. It takes about 2–3 minutes to cook through. When donuts are done, remove from oil and drain the oil on paper towels before rolling them in sugar.

Make sure that the oil is not too hot otherwise the donuts will not be cooked. and its cause your donut black.. like what happen to me :)

Corn Cake

I have this recipe long time ago.. i want to make it long time ago.. but only now then i can make it!

Bread with some Corn Cake
i have this on my bento box for 3 days as my family don't eat at home except weekend if i cook.. :) so i must finish it myself!

Ingredient:
4 Sweet Corn, Shredded.
1 can whole corn.
3 stalk spring onion
200gr prawn, chopped
2 egg
4 tbsp bread flour
2 tsp corn flour
salt to taste
pepper to taste

Method:
1. Mix all corn, spring onion, prawn and egg together
2. add in bread flour, salt, and pepper
3. use tablespoon to shape your batter and fried it in hot oil. fried till golder brown.

easy and simple meals.

NOTE: if it is too watery add more flour.!
its best when u serve it hot. if you cant fried all at one you can keep this in fridge for 3 days.

Pandan Sandwitch + Scramble Egg


i made a scramble egg sandwitch after i get my new toy.. wake up early as my working at 9am..quite fun..but local bread its too small i think or it is standard size?? i make 6 set..KC, da jie , Er jie, her darling , Audrey..(upsss not Audrey, should be Abel) abel is er jie dog , and mama...
